A plea to food-production companies

If you are a part of a company that produces foods and you are concerned for the safety of your consumers, and for the purposes of this blog, specifically for consumers who are either gluten-intolerant or have celiac disease, this is a formal request that you be certified gluten free. Gluten is such a dangerous thing for us and I cannot tell you how much it means to see Certified Gluten-free on labels.  If you are interested, you may go to the website of the Gluten-Free Certification Organization for more information.

Another thing you could do for us would be to make sure that any possible source of gluten is listed on the label. This includes hidden gluten, such as what modified food starch is derived from, and the possibility of cross contamination. The cross contamination qualifier is really important if you are going to put gluten free on your label. This isn't about money folks, it is about pain.
